If baking is going to be therapeutic then you should think about including some options that are either going to be of benefit or that won’t do too much damage. I could spend everyday of lockdown baking, sigh! But I know that if I did that I won’t emerge from the other side in very good shape. Banana and Blueberry Health Loaf is my effort to keep things at least a little healthy.
Dairy and Refined Sugar Free
One of the best benefits of this healthy treat is that I have made it dairy and refined sugar free. Using coconut oil, oat milk and maple syrup I have provided alternatives to ingredients that some people wish to avoid. Yet there is no compromise on taste. This loaf stands up well against any traditionally made banana loaf and I think it is a recipe you will come back to again once you try it.
Fruity Goodness
As the name suggests this loaf is loaded with the goodness of fruit. Bananas (lockdown wouldn’t be lockdown without banana bread!) are full of potassium and fibre. Blueberries are loaded with antioxidants and vitamin C. I love blueberries so much I serve Banana and Blueberry Health Loaf with extra blueberries. And if you were to look at my weekly shop you would see that I get a truckload of bananas each time. My family goes through so many every week it is hard to have spare for baking!

Banana and Blueberry Loaf
Dairy and refined sugar free and delicious!
Ingredients
- 1/2 cup coconut oil melted
- 1/2 cup maple syrup
- 2 eggs beaten
- 2 very ripe bananas mashed
- 2 cups wholemeal self raising flour
- 3/4 cup oat milk
- 1/2 cup blueberries dusted with flour
Instructions

Preheat the oven to 160°C. Beat the coconut oil and maple syrup then beat in the eggs. Fold in the mashed banana. Then fold in the SR flour. Combine mixture with the oat milk. Add the blueberries that have been dusted with a little flour last. Don't over mix.

Pour batter into a lined loaf tin and bake for around 1 hour or until risen and golden and a skewer comes out clean.
Recipe Notes
Don't be concerned at the amount of liquid ingredients in this loaf. The wholemeal flour absorbs more moisture than regular baking flour.
