Banana and Blueberry Loaf

Ingredients

  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup
  • 2 eggs beaten
  • 2 very ripe bananas mashed
  • 2 cups wholemeal self raising flour
  • 3/4 cup oat milk
  • 1/2 cup blueberries dusted with flour

Instructions

  1. Preheat the oven to 160°C. Beat the coconut oil and maple syrup then beat in the eggs. Fold in the mashed banana. Then fold in the SR flour. Combine mixture with the oat milk. Add the blueberries that have been dusted with a little flour last. Don't over mix.

  2. Pour batter into a lined loaf tin and bake for around 1 hour or until risen and golden and a skewer comes out clean.

Recipe Notes

Don't be concerned at the amount of liquid ingredients in this loaf.  The wholemeal flour absorbs more moisture than regular baking flour.
