As much as I love baking cakes, biscuits. and slices, I do love recipes with all good, sustaining ingredients. The food that tastes just as good as the naughty treats but gives you measured energy so you aren’t always craving more. These Fruit and Seed Muesli Bars tick that box but being nut free they are great to pop in the school lunchbox too. But the best part? They taste amazing with the right balance of crunch and chewiness.

If there is anything COVID lockdowns have taught me it is that baking as a family is highly therapeutic. It brings us together and the methodical actions of turning out something delicious are so good for the soul. But baking has a lot to answer for and we need to be conscious of what we are feeding ourselves particularly when restrictions are in place and we are limited in what we can do. Fruit and Seed Muesli Bars are the baking lover’s healthy treat that your family will love.

Fruit and Seed Bars are sugar free using a small amount of rice malt or maple syrup. Most of the sweetness comes from the dried fruit. This mix is yours to create. I love raisins, currants, dried blueberries and dried apricots but you could include dried cranberries for tanginess or dried apple, pear or mango. So good!
The seeds: for me it was pepitas, sunflower, sesame and chia seeds. I love all those nutrients!
For good measure I added a spoon of molasses to add a boost of iron. Great for growing bodies and mum’s doing all the things – remote working and home schooling in tandem.
If you need them to be dairy free you could sub coconut oil instead of butter. My preference is butter but coconut oil works well.
If you wanted to be a little bit fancy you could drizzle these bars with melted chocolate too.

Ingredients

  • 11/2 cups rolled oats
  • 1 cup shredded coconut
  • 1/4 cup dried blueberries
  • 1/4 cup dried apricots
  • 1/2 cup currants
  • 1/4 cup sesame seeds
  • 1/2 cup pepitas
  • 2 tbsp chia seeds
  • 125 g butter, melted or coconut oil, melted
  • 1/3 cup rice malt syrup or maple syrup or to taste
  • 1 tsp molasses (optional)

Instructions

  1. Preheat oven to 180C Combine all ingredients in a bowl then press into a 27cm x 18cm slice tin. Bake until just golden. Allow to cool as it will still be soft then cut into bars to serve.
