Baked Eggs for a Lazy Sunday Breakfast
Baked eggs really measure up for me!
I love Sundays and I love having a filling, easy to prepare breakfast with family or friends that is quick and easy to prepare. These baked eggs are my favourite breakfast and perfect when I have a bit more time in the kitchen on the weekend. For me Sunday breakfasts are an opportunity to take things a little slower – how rushed are we during the week getting ready for work and getting everyone out the door for school!? Usually I don’t think what I am having for breakfast on a work/school day morning. I stick to a fruit smoothie or simple, buttery scrambled eggs. It is all prepared and eaten in a flash!
Simple to prepare
That’s why when the weekend comes around and I don’t have plans I can spend a little time making a wholesome and filling hot breakfast for everyone. Even though they present as a small serving these eggs are packed with flavour and goodness with spinach, mushrooms and ham baked together with the eggs. They are filling and all you need with some hot Turkish bread toast. They could be partially prepared the night before if you like while cracking the eggs into the ramekins right before placing in the oven.
Baked Eggs for a Lazy Sunday Breakfast
Beautiful and mellow these baked eggs are the perfect way to start your Sunday.
Ingredients
- 8 eggs free range
- 150 g leg ham
- 8-10 button mushrooms
- 100 g baby spinach
- 200 ml cream
Instructions

Cook mushrooms in a little butter in a small pan. Add baby spinach and cook until wilted. Divide ham, mushrooms and spinach between 8 half cup ramekins. Crack one egg into each ramekin and top with cream. Cook in oven at 180º for 15 minutes. Serve with hot, buttery toast.
