A refreshing start to the day

What I love about this raspberry coconut smoothie is that it came about because my nutrition loving teenager daughter (that’s an oxymoron isn’t it?) wanted a great way to start the day. She wanted to make something packed full of vitamins and minerals, that was filling enough to have on its own, was easy to make and super delicious at the same time. So she concocted this raspberry coconut smoothie which has a hint of green. Oh my goodness I’m in heaven when I drink this smoothie! Full of the goodness of antioxidants, calcium and fibre and a whole host of other nutrients. My daughter made this smoothie for me every day of my summer holidays. Such a beautiful way to start the day. I felt like I was in a resort! Summer breakfasts are generally lighter than at colder times of the year. My daughter developed this smoothie to share with me in the mornings during the summer holidays but seriously it is so good I could have it all year round. It is so refreshing and a great way to start the day. The days and nights are very hot here in early January and it is lovely to have a fresh drink to get me going.

Jam-packed with nutrients – it is hard to beat!

My daughter put a lot of thought into the ingredients of the smoothie. Raspberries for vitamin C, A, E and B include fibre and antioxidants. It includes spinach which is rich in minerals such as calcium and potassium and vitamins such as B and E. These vitamins and minerals prevent bone disease, iron deficiencies and cardio vascular disease as well as being high in fibre. We used Greek yoghurt for protein and a probiotic for gut health and coconut for fibre and minerals that protect the immune system and protect against bone disease.  All in all this smoothie is great for your skin, bones, gut and heart so it is very powerful. It is delicious and enough to get me through until lunch.

A breeze to make and so versatile

This smoothie can be put together in minutes with the help of a blender or stick blender.  Once you have made this drink the first time it becomes second nature to make it the next.  It’s completely effortless to make. You can even prepare the base ingredients the night before and put them aside in the fridge. All you have to do is tip them into a blender with the milk and blend and froth away.  This recipe is easily scalable – my recipe makes two smoothies but you could easily halve it to make one or double it to make four.  And don’t feel bound to use raspberries or spinach. Try strawberries, blueberries or mint or even kale.  It is as versatile as you want it to be.  If dairy milk is not your thing you could try almond milk instead. What I also love about this smoothie is that it was palatable to all the people in my family which for me is always a win-win.

So grateful for a daughter who can take the time to develop a yummy breakfast smoothie that tastes great and is good for you at the same time!

Ingredients

  • 1 cup raspberries frozen or fresh
  • 1 cup baby spinach leaves
  • 2 dessert spoons Greek yoghurt heaped
  • 1 dessert spoon desiccated coconut heaped
  • 2 cups milk

Instructions

  1. Combine all ingredients in a blender.  Pour into glasses and serve. Frozen raspberries will produce an icier drink which is nice on a hot morning. 

    It is as simple as that! Let's drink to good health!
