Breakfast is the most important meal of the day. It really is. It took me until I was married to realise this when my husband insisted on me having breakfast every morning. Before then I skipped breakfast. With breakfast, I found it made such a difference to my energy levels the whole day. Now I prefer to make my breakfast from scratch. I know exactly what goes into it which I like. If this sounds like a lecture from your mother, well it probably is very similar. No apologies there. In winter I have Cinnamon Oatmeal with Chia Seeds and Berries. In summer I usually make overnight oats with chia seeds and berries or stewed apple.
Powerful Super Food Fuel For Your Day
While my oatmeal tastes amazing the real reason why it is such a wonderful way to start the day is because oats are a true super food. They are a whole grain and great as part of a weight loss or maintenance regime because they keep you feeling very satiated for a long time. Oats are beneficial for heart health and for maintaining blood sugar levels, cholesterol levels and blood pressure. They are often gluten free so anyone can enjoy them. They are full of vitamins (they are high in vitamin B1), minerals (they are high in iron and zinc) and antioxidants and contain more protein than other grains. I like my porridge with and without cinnamon. Cinnamon is also a highly beneficial food rich in anti inflammatory properties and anti oxidants. It is also great for heart health so it marries well with all the benefits of oats. And don’t forget the chia seeds – full of fibre and protein and also a super food.
I use rolled oats rather than quick or instant oats. They are less processed and retain their texture better. I think they just taste better.
For me, I enjoy rustic textures so I don’t cook the oatmeal until it is creamy. The benefit of this is it takes less time to prepare but if your preference is creamy stir it on the stove a little longer. Or you can also soak the oats in the water overnight. It doesn’t take more than a few of minutes before I have a steaming bowl of oatmeal to start the day.

Cinnamon Oatmeal with Berries and Chia Seeds

Ingredients
- 1 cup rolled or steel cut oats
- 2 cups water
- 1 cup mixed berries
- 4 tbsp chia seeds
- 4 tsp honey or maple syrup if using
Instructions

Place oats and water in a saucepan and gently heat on a medium high heat stirring constantly so the oatmeal doesn't stick. (It will stick a little). When to your desired texture spoon into bowls. Top with berries, chia seeds and honey or maple syrup if using. Can be served with dairy or non dairy milk.
