Crispy Vegetable Fritters with Dill Tzatziki are my favourite method of serving up veggies to the veggie averse. I can safely say that most of the vegetables in these fritters would not be willingly eaten by at least 2 members of my family. So I consider it a small victory when these are enjoyed for dinner and taken to school the next day.
Try Meat Free Mondays
These Crispy Vegetable Fritters with Dill Tzatziki are great for meat free Monday’s (but don’t limit them to Mondays!) and if you want to up the amount of vegetables you are consuming. By increasing the amount of vegetables in your diet you are consuming fewer calories and less fat. People who eat a largely plant based diet also weigh less and have a lower incidence of cardiovascular disease.

Crispy Vegetable Fritters with Dill Tzatziki
Crispy morsels of vegetable goodness that are delicious with dill tzatziki.
Ingredients
- 2 lge zucchini grated
- 1 carrot grated
- 1 small eggplant finely chopped
- 1 cup frozen corn kernels
- 1 small bunch shallots
- 3 eggs beaten
- 100 g goats cheese
- 1 cup parmesan cheese grated
- 1 bunch dill chopped
- 1/2 cup self raising flour
- 1 cup olive oil for shallow frying
Instructions

Combine vegetables, flour, cheeses and dill with beaten egg. Mixture should be slightly wet. Drop tablespoons of mixture in hot oil. Turn once so that both sides are golden, edges crispy and the fritter is firm. It usually takes only a couple of minutes each side. Serve with Dill Tzatziki.
