30 Minute Seared Salmon with Lemon Risotto is a Lemony Boost

I think what makes this meal so light and refreshing is the liberal use of lemon juice on both the salmon and the risotto. Lemon juice is a powerful ingredient to use when watching your weight and managing blood sugar levels. It should be used regularly in your diet. In the risotto it is extremely tasty. So much so that for lunch the next day I took a salad with a spoon of lemon risotto and it was beautiful. Please note, there isn’t any cheese in this risotto so it is light but very enticing.

Super Simple

My method for making this dish is to cook up the risotto (20 minutes), then pan fry the salmon (5 minutes, if that) then assemble your greens – I chose broccolini here. It’s simple, quick, light and enjoyable. I love the way the flavours don’t compete combining the freshness of the salmon and the zing of the lemon risotto.

30 Minute Seared Salmon with Lemon Risotto

A Light and Lemony fish dish that is super quick to make and tastes like restaurant quality!

Ingredients

  • 1 onion finely chopped
  • 3 cups arborio rice
  • 7 Cups hot vegetable stock
  • 2 tbsp chopped fresh dill
  • 2 lemons juiced and zest from 1 lemon
  • 6 salmon fillets
  • 4 tbls vegetable oil

Instructions

  1. Gently fry onion in a little oil in a large pot. Add arborio rice and stir until translucent. Add the hot stock, one cup at a time, stirring constantly (it's worth it!) until all the stock is absorbed - about 20 minutes. Take the risotto off the heat and add the lemon juice from 1 lemon, the zest and the dill and test to see if the flavour is to your liking. Add more lemon juice if you like more zing.

  2. Heat the oil in a frying pan and sear salmon fillets, skin side down first until crispy then turn to cook the other side. The salmon should be just cooked and shouldn't be cooked so much that it is flakey.

  3. In the meantime assemble the risotto on serving plates with your greens and top with salmon and some slices of lemon. Mouth watering!
