A Dessert With Impact

I love it when I can serve a low sugar dessert that has great impact.  The love the creaminess of Greek yoghurt and cream cheese and the berries and the raspberry coulis really elevate this dessert.  Whenever I have made Mixed Berry Delight I have received accolades.  I think it is because people find it refreshing to eat a truly low sugar dessert that is creamy, fruity and delicious at the same time. This is a mixed berry dessert that is low sugar, full of benefits and looks amazing.

Berries are Beneficial and Look Tremendous!

I write a lot about the benefits of berries.  They are packed full of vitamins that are great for those watching their sugar levels.  They are full of antioxidants and fibre.  They aid digestion, are great for heart health including helping to control cholesterol levels.  They are known for great at fighting and preventing cancer. Additionally, they are great for supporting bone density.  We always have a supply of frozen berries in our house not only because they taste great but because they are wonderful for your health.

The raspberry coulis swirled through the yoghurt and cream cheese mixture looks amazing. To feed 6-8 of us I used 500g of mixed berries plus about 3/4 cup of raspberries for the coulis.  It is worth using this amount of berries because the dessert tastes great with them and they are so good for overall health.

Versatile Presentation

You could easily present Mixed Berry Delight in individual glasses.  I have a particular glass bowl that was a wedding gift and I love using that.  A large glass bowl looks just as impressive.

Is this a health food?

I love that this dessert is so rich in calcium and has the added benefit of a probiotic.  What isn’t there to love about it. It’s so good.

This Mixed Berry Delight is perfect to serve if you have served something rich for main course.  I served it recently after one of my mother’s famous roast lamb dinners and it was perfect. It was the perfect way to round off the meal which was quite rich in itself.  The Mixed Berry Delight has the right amount of sweet and tanginess.

So easy….

And did I say it is easy to make? Sure is! Simply blend the cream cheese and yoghurt, heat and blend the raspberries for the coulis then layer with the mixed berries.  It took me about 15 minutes the last time I made it.

Mixed Berry Delight

A low sugar, creamy berry dessert that tastes amazing and looks beautiful.

Ingredients

  • 3/4 cup raspberries
  • 2 tbsp caster sugar
  • 500 g mixed berries
  • 250 g cream cheese
  • 400 g Greek yoghurt
  • 1 tbsp vanilla extract

Instructions

  1. Heat the raspberries and sugar in a little water until soft.  Blend with a hand blender or in a blender until smooth to make a coulis. Blend yoghurt, cream cheese and vanilla until smooth. Layer mixed berries in the bottom of a glass or glass bowl. Top with yoghurt/cream cheese/vanilla mixture. Spoon over coulis and swirl through the mixture. Repeat until all berries and mixture are used, swirling the coulis through the mixture on top.  Top with a few berries or a sprig of mint or even some crushed nuts.
