Another knock on effect of lockdown is that there is plentiful fresh produce available because cafés and restaurants aren’t open or doing as much trade.  This makes it hard for the restaurant trade but equally as tough for the growers. And because it is strawberry season these popular fruits are available at a much reduced price. So now you can make jams, pavlovas, have fresh strawberries and Easy Strawberry and Cream Ice Cream to your hearts content.

Only 4 ingredients!

Now when I make ice cream I don’t use an ice cream churn. I own one but I operate with very minimal appliances because I don’t like clutter. Besides, this ice cream is literally mix and freeze before you have creamy deliciousness. And all using only four ingredients. Simply cream, sweetened condensed milk, a dash of vanilla and strawberries.

Semi good for you

Yes it contains cream and condensed milk but with the addition of fresh, ripe strawberries I bet this ice cream errs on the side of healthy compared to most commercial ice creams. It has a whole two punnets of strawberries in it so there is much goodness. Strawberries are full of anti oxidants and vitamins. Feel free to swap strawberries for other berries but at the moment with strawberries being so plentiful and the growers needing our support they are my pick. Strawberry ice cream looks so pretty too. That said blueberries are also plentiful so you could make a batch of blueberry ice cream as well!

My family usually opts for chocolate ice cream but I got resounding support when I presented this dessert. I can guarantee your tribe will pop back for more with this one.

Ingredients

  • 600 ml thickened cream
  • 395 g sweetened condensed milk
  • 2 tsp vanilla
  • 2 250g punnets fresh, ripe strawberries chopped

Instructions

  1. In a bowl roughly blend the strawberries with a hand blender. Don't over blend.

  2. In a separate bowl mix the cream, condensed milk and vanilla together with an electric beater until well combined.

  3. Add strawberry pulp to the cream mixture and combine with a large spoon then transfer to a container with a lid then pop in the freezer to freeze over night.
