Smoked Salmon Frittata
I took part in a lovely Christmas wreath making afternoon to raise money for the Country Women’s Association drought relief effort. Milly, Molly and Me offered to take a plate of food to share so I decided on Smoked Salmon Frittata – delicate and delicious and perfect with a glass of champagne. It was a good opportunity to road test a recipe. The reason why the recipe has made it to the blog is because the frittata was so well received, disappearing in an instant. That’s not very modest of me but I am proud to say it was a success.
Christmas wreath making was the perfect way to celebrate some early Christmas cheer. It was relaxing and creative. It was good to help those suffering in the country, even if in a small way. For more information on the CWA Drought Aid click here. Here is an example of my efforts-
I even used bay leaves in the wreath – I suppose it all relates to food in my world!
For the frittata – so easy – I combined eggs, cream, dill, parmesan cheese and smoked salmon in a slice tin and baked it until puffed and golden. I sliced it when cooled into bite sized morsels. If you love smoked salmon then you will enjoy Smoked Salmon Frittata. Don’t just keep it to enjoy with drinks, it is lovely served in larger slices with a salad.

Ingredients
- 6 eggs beaten
- 500 ml cream
- 4 tbsp fresh dill
- 200 g smoked salmon flaked
- 100 g parmesan or grano padano cheese finely grated
Instructions

Preheat the oven to 200°C. Combine all ingredients in a bowl. Pour into slice tin and bake until puffed and golden - about 20 minutes. When cooled slice into small squares. Serve with champagne and enjoy your Christmas festivities.
