Smoked Salmon and Potato Rosti – Delightful, Delectable
What is your favourite way to serve smoked salmon? Growing up it was on pumpernickel with cream cheese. I have developed another take on presenting this delectable food however. Smoked salmon and potato rosti. Every bit if not more delicious. Here I have served it on a bed of crispy potato rosti with watercress, French beans and some dill cucumbers. Served with a spoon of dill cream mayonnaise. This is So Good. You will wish you had too serves. All the flavours and textures work so well together. I mean what’s not to love about smoked salmon? Pair it with potato rosti, some fresh greens and a moreish dressing and you have a winning combination. Serve it as a light lunch or a beautiful entree – you can’t go wrong. It looks elegant and tastes so special.

Smoked Salmon and Potato Rosti
A delicious, no delectable take on my favourite, smoked salmon
Ingredients
- 75 g butter melted
- 3 medium potatoes grated
- 200 g smoked salmon
- 200 g french beans
- 1/4 bunch watercress
- 6 dill cucumbers
- 1/4 cup sour cream
- 1/4 cup whole egg mayonnaise
- 1 tbsp chopped dill
Instructions

Melt butter and stir through grated potatoes. Spoon tablespoons of potato mixture into an oiled frying pan and cook on medium high until crisp and golden, turning once.

Combine sour cream, mayonnaise and dill.

Assemble with rosti on plate topped with slices of salmon, greens and a spoon of dressing on the side with sliced cucumbers. Serve and enjoy. That's it!
