Are you looking for a salad that goes beyond the crunch of greens and few tomatoes? A salad whose flavours excite the tastebuds and complements the rest of the meal? A salad that is quick and easy to prepare yet super impressive? Perhaps you want something different and special that will remain part of your repertoire now and into the future. This salad really measures up and never fails to delight. You can’t go wrong with it. Pear, pomegranate and goats cheese salad – fresh and easy and looks beautiful, tastes amazing and is super beneficial for your health.
Pear, pomegranate and goats cheese salad is my favourite salad to bring out for a dinner party. It is literally my all-time favourite salad because the flavours are so light and fresh. The goats cheese is creamy yet it has bite and the pomegranate seeds really pop. And it looks simply stunning on a platter. It is seriously the salad you have to make when a simple garden salad just won’t do.
Autumn flavours
Here in Sydney pears (I use beurre bosc) and pomegranates are in season in Autumn so this is the perfect Autumn salad. Granted, you can get both pears and pomegranates all year round but they really are at their best in Autumn so I enjoy making this salad especially at this time. But don’t hold back at other times of the year if you have access to the ingredients.
Super salad
There is so much green in this salad. Generous handfuls of watercress and spinach so you are going to feel really good about eating it. The watercress is beautiful and peppery. Both have so many health benefits. Both are high in vitamin K and other nutrients such as anti oxidants and nutrients that support heart health and protect against and fight cancer. The watercress and spinach make this salad a superfood essentially. The walnuts are rich in Omega 3 oils and vitamin E. The anti oxidants found in walnuts can help fight the damage caused by ‘bad’ cholesterol.
There is definitely no need to hold back with this salad it is so good for you and one that you should feel proud to serve to family and friends!
So quick to assemble
This salad literally takes me 5 minutes to put together. Yes, wash the greens, loosely chop the watercress, slice the pear, crumble the goats cheese, de seed the pomegranate – there is a trick to this. 5 minutes of preparation for maximum wow factor!
Make enough!
Be warned, you will want to be sure that you make a big platter of this salad to share because it goes in a flash. I have had many, many compliments for this pear, pomegranate and goats cheese salad which is so encouraging and ensures that I keep making it. You don’t get bored of the flavours – sweet, savoury and peppery all at once. Delicious! And it looks fabulous too. Green, white with the beautiful ruby colour of the pomegranate seeds – so pretty, fresh and inviting.
