Lemony Coconut Slice: Indulge Your Sweet Tooth
Sometimes you need a little sweetness in your day and a slice is the perfect way to treat yourself. As the portions are quite small you can indulge but not over do it. This Lemony Coconut Slice is lovely with a cup of tea. My children also like it in their lunchbox so it ticks all boxes really! Be warned, it is quite moreish! Everything in moderation though, right?
Lemon Snow to Lemony Coconut Slice
This slice was first named ‘lemon snow slice’ because the icing is as light as snow. I didn’t end up calling it that because I didn’t think it would show up the search engines. We found that it was hard to resist. I road tested it at my work – my day job – and the response was overwhelmingly positive. I was chuffed that everyone made favourable comments! It is good to get some feedback outside my usual circle of taste testers.
I make no apologies – this slice is sugary – not good if you are watching your blood sugar or your weight. I can’t even do my usual round up of nutrition benefits because really the only benefit is that it satisfies cravings for sweetness. I am sorry if this is a problem for you but we need a little treat on the sweet side every now and again. The plus is the lemon in the base and the icing really cuts through the sugar and gives it a lovely tang.
So this slice might be a good one to serve for an afternoon tea. Actually as you can cut it in quite small squares it could make up part of a special high tea. So go on, indulge your sweet tooth and make Lemony Coconut Slice as your special treat. You won’t look back!
Lemony Coconut Slice
A sweet treat that satisfies your sweet tooth with a lovely lemony flavour.
Ingredients
Biscuit Base
- 125 g butter softened
- 3/4 cup brown sugar
- 11/4 cup self raising flour
- 3/4 cup dessicated coconut
- 1 1/2 lemons juiced
Icing
- 350 g icing sugar mixture
- 100 g butter softened
- 1 lemon juiced
- 3-4 tbsp dessicated coconut extra
Instructions
Biscuit Base

Set the oven to 180°C. Beat the butter and brown sugar until creamed. Mix in coconut and self raising flour. Stir in lemon juice to create a soft dough. Press dough into a lined slice tin and bake for 20 minutes until golden. Allow to cool.
Icing

Combine icing sugar, butter and lemon juice until a smooth icing forms. Spread over cooled base and sprinkle with extra coconut. Chill in the fridge for a few hours until icing is firm and the slice is easy to slice into small squares.
