This Kale and Gorgonzola Salad is sooo simple I almost thought I couldn’t make a post about it. But I just had to. I love this salad so much. It is simple, flavourful and oh so good for you.

Kale is a Superfood

The kale in this salad will deliver a huge boost to your nutrition and it is easy to incorporate into your diet. Here is what the people at healthline.com are saying about kale and its benefits:

Why is vitamin K so important in our diet? It helps our blood clot and it is imporant for absorbing calcium so it is also supportive to bone health.

So overall kale is such a super food. But it is so tough I hear you say? Yes it is but for this salad you massage a liberal amount of olive oil into it and it relaxes substantially losing that tough texture.

What I love about this salad as well is the beautiful taste of the gorgonzola crumbled through. I love blue cheese of any description but if you are not a fan, gorgonzola is not a hugely stinky cheese. By crumbling it through it adds a richness that is not overpowering but utterly delicious. And blue cheese of any type is very high in calcium, more than other cheeses. So there you go – the calcium in the cheese is readily absorbed by the vitamin K in the kale. A match made in heaven!

Kale and Gorgonzola Salad

A simple and delicious nutrition dense salad you will love.

  • 1 lge bunch kale
  • 200 g gorgonzola cheese
  • 100 g pine nuts or more if desired!
  • liberal amount olive oil extra virgin


  • 3 tbsp olive oil extra virgin
  • 1/4 cup red wine vingegar
  • 1 tsp honey


  1. Wash the kale leaves and cut the leaves off the thick stems. Slice leaves finely. Pour a liberal amount of extra virgin olive oil over the kale and massage into the leaves for a minute or two until the leaves begin to soften. Crumble the gorgonzola cheese over the salad. Whisk the remaining olive oil with red wine vinegar and honey. Pour over the salad. Toss then serve. Delicious!
