Apple, Cinnamon and Yoghurt Loaf

The beauty of Apple, Cinnamon and Yoghurt Loaf is that you will probably have all the ingredients in your pantry and fridge before you start. It contains good things like wholemeal flour, apples, yoghurt, butter and eggs and that sweetest of spice, cinnamon. It is one of those handy loaf cakes that you can throw together at a moment’s notice and enjoy for morning or afternoon tea.
While I made this loaf with brown sugar, feel free to substitute this with maple syrup or rice malt syrup for a lower sugar content but all the flavour. You will want to put a little brown sugar and cinnamon on top though which finishes the loaf off nicely.
A Family Favourite
This loaf can be enjoyed plain straight from the oven or simply spread with butter. Either way you will want to have a second piece. And this is the perfect loaf to pack for school lunches. My children actually request it when they know I have made it. They love it. It is just the right combination of comfort and whole food goodness that keeps them hooked and gives them lots of energy to last the distance in the school day.
All the Good Things
Choosing to use wholemeal flour in this loaf is a good thing. For one it is high in vitamins and minerals and two, it is high in fibre. So even though there is no difference in the calorie content when compared with white flour you are reaping the benefits of added nutrients and fibre. Food made from wholemeal flour supports a healthy diet unlike processed flour which really only provides carbohydrates.
In addition, cinnamon which is used liberally in this recipe is high in antioxidants and anti-inflammatory properties. It is thought to reduce the risk of heart disease and can lower your blood sugar levels. Nice!
There are probiotic benefits to eating this Apple, Cinnamon and Yoghurt Loaf which come from both the yoghurt and the apples. Yay! I probably don’t need to tell you why apples are good for you. Just quickly though the benefits are – good for weight loss, blood sugar levels, prevent cancer and can fight asthma!

Apple, Cinnamon and Yoghurt Loaf
A wholefood sweet fix that satisfies the cravings for cake but ticks lots of boxes for food that is good for you.
Ingredients
- 2 medium apples chopped in small pieces
- 2 tbsp cinnamon
- 3 tbsp brown sugar
- 125 g butter
- 1 cup brown sugar or
- 1/2 cup maple syrup or rice malt syrup
- 2 eggs beaten
- 2 cups Self Raising wholemeal flour
- 1 cup Greek yoghurt
Instructions

Preheat oven to 170°C Combine the apples with the cinnamon and 3 tablespoons of brown sugar.

Cream the rest of the brown sugar or syrup if using with butter. Beat in eggs. Fold in apple and cinnamon mixture. Combine all these ingredients with flour. Fold in yoghurt. Spoon into a loaf tin lined with baking paper and bake for 50 minutes or until a skewer tests clean. Allow to cool for 10 minutes before removing to a wire rack. Serve sliced with or without butter and your favourite cup of tea or coffee.

Is there supposed to be baking powder in this recipe? The loaf had no rise and was extremely dense
Hi Glenda, I do apologise. This one slipped through proof reading and quality control. Yes you would use self raising wholemeal flour or add baking powder to plain wholemeal flour. I hope you make it again with the correction. My apologies again.
