I’m a firm believer that not only can food be good for the soul but that it can be extremely healing for your body. There’s so much harm we can do to our bodies if we eat the wrong foods. In this soup, most of the ingredients have anti inflammatory properties
- tumeric
- cumin,
- sweet potato,
- red lentils,
- tomatoes,
- celery and
- garlic.
The soup contains carrots as well but most of their beneficial properties are reduced when cooked. That’s an impressive lineup of beneficial ingredients however.
With all that goodness, how does it taste? This soup tastes so delicious it is on regular rotation in my house. The recipe makes enough for dinner with generous leftovers to have the next day or to freeze for later. I am not lying when I say it is enjoyed by my whole family including the pickiest of eaters.
Even though my family is flexitarian in dietary choice we love the plant based options that I serve for all the benefits they bring. At least every other night we eat plant based meals and we enjoy them. Sweet Potato and Lentil Anti-Inflammatory Soup
A Plant Based Meal Option that is Healthy and Delicious
Ingredients
- 1 large brown onion chopped
- 2 sticks celery chopped
- 1 large carrot diced
- 1 tbsp cumin
- 1 tbsp tumeric
- 1 large sweet potato cubed
- 2 cups red lentils washed
- 2 tins diced tomatoes
- 8 cups vegetable stock plus extra
- 3 tbsp olive oil
Instructions

Gently pan fry onion, celery and carrots in olive oil until softening. Add spices. Add sweet potato and coat with spices. Add red lentils and diced tomatoes then add the stock. Cook for around 40 minutes until all the vegetables are soft. Add extra stock if the soup is too thick. Season with salt and pepper to taste.
