Creamy Mushroom and Spinach Ragout

Delightful and Comforting

When I think of food that is pure delight and utter comfort then Creamy Mushroom and Spinach is one of the first dishes that springs to mind.  So simple to make yet incredibly nutritious and utterly delicious.  Mushroom and spinach make a winning combination and the creaming – not cream at all but Greek yoghurt, makes it simply delightful.

The Nuts and Bolts of the Benefits

Let’s start with what is so good about this dish apart from the taste.  Mushrooms are full of fibre, absolutely full of it, so great for gut health and some studies show that fibre can help combat the effects of arthritis.  That’s two great reasons for including mushrooms in your diet.  And spinach, well the considerable amount of vitamin K makes it a superfood so it is good for bone health and the vitality of your blood. Spinach is a also great source of vitamin A, for vision health, vitamin C, for immunity and folate for cell growth as well as being a good source of other minerals and vitamins such as iron and vitamin B2. It is hands down a superfood that you can’t go past. That’s why I include it in so many of my meals. I love it.

I like to include button mushrooms but field mushrooms or swiss brown mushrooms would also work well.  I choose to use English spinach from the fruit market rather than baby spinach. It has such an incredible depth of flavour which I love.

Simple and Quick

I pan fry the mushrooms first in butter and oil until they start to brown.  Butter adds a beautiful flavour that the oil doesn’t achieve on its own. Then I add the spinach and let it wilt.   The yoghurt is added last when the mushroom and spinach are off the heat– about two tablespoons or to your liking.  I also include a chopped clove of garlic and some cracked black pepper.

I serve this dish as is for lunch or with roast beef for dinner. You can probably find many other ways that make it super enjoyable. Either way I just love it!

It’s delish – trust me! I dare you to try Creamy Mushroom and Spinach and not love it!

  • 3 tbsp olive or sunflower oil
  • 2 tbsp butter
  • 1 clove garlic finely chopped
  • 500 g mushrooms of your choice quartered or sliced
  • 1 bunch English spinach chopped roughly
  • 2 tbsp Greek yoghurt or more if you wish


  1. Heat the oil and butter in a frying pan until foaming. Add the garlic and fry gently. Don't brown. Add the mushrooms and turn them as they brown. Then add the spinach and cook it until it wilts. Take the pan off the heat and stir in the yoghurt. Add some cracked pepper and salt if you wish.
