A Season for Celebration
Today is the Twelfth day of Christmas. The decorations have come down. The fairy lights are still up for us to remember the warmth of the season. I have been reflecting on my family’s celebrations for Christmas 2024 and New Years for 2025. We had an incredibly relaxed and warm time with all our extended family for which I am truly grateful for. This time of year can be challenging. Sometimes tensions are heightened and loved ones who have passed are missed. For us it was an extremely special time of family get togethers with wonderful food and sparkling conversation. I love it so much that for our New Year’s Celebration I made Chocolate, Almond Slice with Raspberry Sauce.
A Dessert to Celebrate the New Year With
To kick 2025 off we had a family dinner. All very delicious but I wanted to share the dessert I made which was warmly received. Chocolate, Almond Slice with Raspberry Sauce. An iteration of a slice that I made back in the day served with raspberry sauce, fresh raspberries and cream. This satisfied my penchant for baking and my family’s penchant for chocolate. It is the perfect dessert for a celebration and a special treat.

Chocolate, Almond Slice with Raspberry Sauce uses all the good, from scratch ingredients that I love to bake with so you know exactly what is in it. It combines the richness of almond meal with the lightness of coconut to create a beautiful texture that everyone will love. I drizzled dark chocolate over the finished slice and served not very big slices with raspberry sauce, cream and fresh raspberries. A beautiful combination of flavours. I serve raspberry sauce rather than raspberry coulis because I prefer not to sieve the sauce leaving the seeds in.

Chocolate Almond Slice with Raspberry Sauce
A delicious, chocolatey dessert to serve for a celebration that will please everyone.
Ingredients
Chocolate, Almond Slice
- 250 g butter softened
- 1 1/2 cups caster sugar
- 4 eggs
- 2 cups plain flour
- 2 tsp baking powder
- 1 cup almond meal
- 1 cup coconut desiccated
- 4 tbs cocoa powder heaped
- 200 g dark chocolate melted, for drizzling
Raspberry Sauce
- 2 cups frozen raspberries
- 1/4 cup caster sugar
- 3 tbsp water
Instructions

Preheat oven to 170°C. Beat the butter and sugar until pale and creamy. Add eggs and beat well. Combine with flour, baking powder, almond meal, coconut and cocoa. Press evenly into two slice tins lined with baking paper. Bake for around 15 - 20 minutes. When cool, drizzle with dark chocolate
Raspberry Sauce

Place sugar and water in a small saucepan and heat until sugar dissolves. Add frozen raspberries and cook until raspberries are soft. Blend until smooth with an immersion blender. Chill.
To Serve

Plate slices of the chocolate almond slice and pour a small amount of fresh cream, raspberry sauce around it then top with fresh raspberries.
Recipe Notes
This recipe makes enough to serve 12 people plus left overs. You could simply halve it if you wanted to using only one slice tin. Feel free to make the size of slices as small or as large as you like.
