Chocolate Almond Coconut Slice
Chocolatey Morsels of Deliciousness!
We’ve been doing a lot of baking in my house this year. I think everyone has. When we were in lockdown a few months ago the only flour I could buy was in 20kg sacks. So I am still making my way through that stash! I love baking. I don’t necessarily indulge in everything I bake. Baking is satisfying because it lends itself to a smile. I do write a lot about healthy eating and I subscribe to that completely. But I believe in balance. So if you are eating a healthy diet then a square of slice with a cup of tea is not going to hurt you. Chocolate Almond Coconut Slice is my answer to satisfy my urge to bake and my family’s sweet tooth.
The proof is in the tasting with this slice. So easy to make. And quick! The almond meal rounds out the flavours so well, the coconut keeps it moist. This is a favourite that doesn’t last long in my house and is a special request for lunch boxes and afternoon tea. I think when I developed this recipe I wanted to use all the ingredients that make baking so satisfying. And it is a very satisfying treat. You only need one slice to curb those cravings. Perfect with a cup of tea for some me time!
Leave the Almonds Out if You wish!
One thing to note with this slice is that if you have an aversion to nuts, you can replace the almond meal with 1/2 cup of SR flour and the slice will still turn out well. I like to give my children a small piece of something I have baked to take to school. This is a better option than them taking something packaged and processed. If I am making it for the lunch box I would leave out the almond meal to adhere to school no nut policies.

Chocolate Almond Coconut Slice
An easy, chocolatey slice that comes together quickly and satisfies those niggling cravings for something sweet and chocolatey.
Ingredients
- 125 g butter
- 3/4 cup caster sugar
- 2 eggs beaten
- 1 cup self raising flour
- 1/2 cup almond meal
- 3 tbsp cocoa powder
- 1/2 cup desiccated coconut
Icing
- 1 cup icing sugar mixture
- 1 tbsp cocoa powder
- 75 g butter
- 1 tbsp milk
- 2 tbsp coconut
Instructions

Beat the butter and sugar until light and fluffy. Add beaten eggs. Combine with flour, almond meal, coconut and cocoa powder. Press into a slice tin and bake at 180ºC for 15 to 20 minutes. Allow to cool. Melt butter and mix with icing sugar, cocoa and milk til smooth. Spread over slice and dust with coconut.
It is that simple!
Hi, I’m just making this now. The instructions don’t mention adding the eggs so you may want to review the recipe. I’ve added the eggs once the the butter and sugar have creamed.
